That looks like it only uses the ucontroller to play back the sounds, and filtering and envelope stuff is done with analog circuitry.
That said, sure, you could do something like it.
If you have a Grains it might be easier since it's slightly beefier. Check out feijai's massive pile of Grains firmwares for ideas. The 808 firmware might do what you're thinking, or at least you could look at it and see if it's useful.

Hmm, that looks interesting! Yes, there's some additional analogue stuff around there, but it could be fun to see what it sounds like 'raw' It also doesn't look hugely complicated; maybe I'll have a go at translating it in a fit of procrastination 🤣

But there’s something about the limitations of the Core that appeals to me (plus that I can get it here in the UK).
