Eurorack Circuits are very easy to find. What do I need to do to adapt them to AE format? This is very much a "how long is a piece of string question"; it depends on the particular circuit - the component requirements (many ICs cannot use 5V only), and also what you want to achieve. A simple circuit could just be used with 5V instead of the 10 or 12V of the original and, of course, it needs to be a circuit that doesn't need the negative voltages to produce the result as that won't transfer to the AE either. I would suggest posting a circuit diagram you are interested in and see what the response is....

I'm new to the world of DIY electronics and wanted to go the AE route since the modules are so much more affordable.
